I am interested in pedagogical questions relating to rigorous (mathematical physics) quantum mechanics, so I'd like to find some textbooks containing great practice exercises.

I have rephrased your question a little bit, to clarify its meaning. Also, while "questions" is quite vague, I think "problems" could mean "the book should be full of errors", so I changed it to "practice exercises".

And since you used the "mathematical physics" tag, I've also included rigour as a requirement. If you meant "mathematical physics" as something else, you may revert my change, but keep in mind, that PhysicsOverflow is a graduate-level+ site, so undergraduate-level QM is not accepted here (mathematically rigorous QM is usually graduate-level, and I guess this is what you are interested in).

Feel free to revert my edits, if you feel that they are inappropriate.

The best collection of mathematical problems in quantum mechanics in my opinion are in Landau and Lifschitz. There is a comprehensive list of exercises, including lots of interesting problems that don't appear in other texts, for example, a particle in an inverted harmonic oscillator. You can ignore the text if you like (although it's also great), the problems are all self-contained.
