Well, as the title says, is it possible to review a preprint without disclosing a name or email (but still be known to some selected "editors")?

In principle, yes. One just doesn't get credits for it.
Ehm, ok, how?
A. If the paper is already in the submission list (submission button), just post your review there as an answer.
B. If not, you need first to submit the paper using the submit paper button, and if the submission is accepted, proceed as under A.
I am sorry but I still don't get it: reviewing without logging can be done anonymously. But then completely anonymously, nobody really knows who you are, unless you have provided an email, right?
Yes, of course; that's the meaning of anonymous. But your review can be edited by high rep users, or hidden if it consists of nonsense; see the FAQ.
